Rainbow Carrots

The same crisp, sweet carrot you know, grown in heirloom colors — deep purple, golden yellow, classic orange — that make any dinner plate look a little more alive. Great roasted whole or shaved raw over a salad. The skin's thin enough that a good scrub is all they need; peeling is optional.
