Made fresh in small batches and packed in its own whey, with that soft, milky pull that the shredded stuff can't fake. Best the day you buy it, sliced thick with tomatoes and basil. It melts differently than the aged, shredded kind too — a little more give, a little less stringy — which makes it a different kind of good on pizza.
