Aged Cheddar

Aged over 12 months for a sharp bite and slightly crumbly texture, with those little crunchy crystals that mean it's been given real time. Best enjoyed sliced thick, nothing else needed — though it holds its own next to a dark ale or a sliced apple too. Once opened, wrap it in wax paper rather than plastic so it can still breathe a little.
